Pina Colada Cheesecake

Today, I had no idea what I was going to fix for dinner, but, as I sat drinking my coffee this morning, the wheels started turning (no squeak, but I did smell the smoke) and I got the idea to make a No-Bake Pina Colada Cheesecake. This is an impressive, yet super-simple dessert that will impress 8 people or 4 really big eaters!
First the ingredients:
1 pre-made graham cracker crust, or one made of Nilla Wafers would be good, too!
2 packages of cream cheese, room temperature...I always use neufatchel, the 1/3 less fat kind
1 package of Tropical Fusion Jello...or use pineapple flavored, but use the 8 serving size package
1/4 cup sugar
1 (15 ounce) can crushed pineapple, drained
1 shot of GOOD rum...now's not the time to be cheap!!
1/2 cup shredded coconut
1/2 (8 ounce) tub of Cool-Whip whip topping or generic, it doesn't matter, just don't use the stuff in the can, it just doesn't work for some reason and neither does homemade...I think it has to do with the volume but I don't get into all that scientific jargon! Cream the neufatchel, Jello, rum and sugar together until you whip the heck out of it and it's thoroughly combined. Fold in the pineapple and coconut until it's combined and then add the Cool-Whip and fold it GENTLY until it's all thoroughly combined! Scoop it into the graham cracker crust, top with a couple of maraschino cherries, put it in the fridge for at least 4 hours and there you have it...No-Bake Pina Colada Cheesecake!
I made this tonight for dessert after Lime-Tequila Marinaded Shrimp and Scallops, rice, peas & carrots and a salad made with lettuce, radishes, green onions and cilantro from my recycled container garden along with a Lime-Cumin Vinaigrette! Oh, yeah...we're kicking it Caribbean style here in the ol' RV...bring on the rain!
